The meticulous process of winemaking begins with the careful crushing of grapes, followed by the removal of stalks to ensure the purity of the juice. This free-run juice is then transferred to a tank, where it embarks on its transformative journey through fermentation at controlled low temperatures, allowing the delicate flavors to develop harmoniously. Meanwhile, the remaining must undergoes a crio-maceration process, where it remains in contact with the skins for approximately 12 hours at a cool 50°F, extracting essential aromas and color. Once the skins are removed, the must continues its fermentation at a slightly elevated temperature of 55.5°F, paving the way for a subsequent malolactic fermentation that enhances the wine's complexity and smoothness. Finally, the wine matures gracefully for six months on its lees, enriching its texture and depth, resulting in a distinctive and refined product that embodies the artistry of winemaking.
